Cold Smoked Salmon

Ingredient

  • Fresh salmon
  • Salt
  • Sugar
  • Black pepper
  • AK SMith's FISH spices
  • Cognac barrel wood dust

Recipe

  1. Wash and dry salmon using paper towel.
  2. Sprinkle salt, sugar and pepper.
  3. Leave salmon to marinate for about 24 hours in a cool place.
  4. Before smoking process, wash the salmon off salts and dry it off using paper towel.
  5. Use some of AK Smith's spices for fish, to add more flavours. Just sprinkle over the salmon.
  6. The cold smoking generator should be filled with wood dust and placed on the ash grate (instead of charcoal). We leave both vents just slightly opened. You need to light the dust with the help of a small table candle.
  7. After about 10 minutes or when dusts are well lit, the candle can be removed.
