*** Use only quality charcoal that does not emit ANY SMOKE. Any food cooked with bad quality charcoal will have an unpleasant smell and taste.
Ingredients
- Pork cheeks
- Delicia's Garlic Pepper spices (salt, pepper, garlic granules)
- Paprika
- Onion
- Sweet peppers
- Carrots
- Chicken stock
- Tomato sauce 2 tbsp
- Brown sugar 2 tbsp
Recipe
- Marinate the pork with olive oil, Delicia's spices (salt, black pepper, garlic), and paprika.
- Prepare the kamado grill: light the charcoal and place the heat deflectors and drip pan in.
- Heat the grill to 110°C.
- Choose your favorite wood chips for hot smoking.
- Fill the smoker box or smoking tube with wood chips and place it on a hot spot of the charcoal.
- For convenience, use a silicone mat.
- Once you see smoke coming out of the top vent, place the meat in the grill for hot smoking at 110°C for 2-3 hours.
- After smoking, transfer the meat to a cast iron pot along with chicken stock, onion, sweet peppers, carrots, brown sugar, and tomato sauce.
- Cook it low and slow for around 2-3 hours over direct heat (without deflectors).
- Enjoy!
